Late summer crush: Marinated peppers with a fat creamy burrata

 
 
Why peppers are so good for you: 
Peppers have a lot going for them. They're low in calories and are loaded with good nutrition. They are excellent sources of vitamins A and C, potassium, folic acid, and fiber. They lavish you with antioxidant and anti-inflammatory benefits. They help reduce ‘bad’ cholesterol, controls diabetes, brings relief from pain and eases inflammation. The sulfur content in it make them play a protective role in certain types of cancers. 
 
Tip: Prepare the day before so that the peppers have time to marinated and soak up all the flavors. 
 
What you need for about 6 people :
- 8 red peppers 
- Lots of Basil 
- Olive oil 
- Salt and pepper 
- A little bit of garlic for the stinky breath (but oh, so good!) 
 
Let's get cooking! 
 
Preheat oven on grill position 
Line the bottom of a baking tray with baking paper 
Rinsed the peppers with water and display them on the tray 
Grill on all 4 sides until the skin is blackened 
Once the 4 sides are grilled, remove the peppers from the oven 
Cool peppers wrapped in newspaper or baking pepper (it will make them sweat and caramelized a little bit) 
Once the peppers are at room temperature, peel the skin off, cut into strips and remove the pips 
Arrange in a hollow dish and display them in layers. After each layer, add salt, black pepper (a little bit of fresh garlic) chopped basil. and start the second layer. Repeat until no more pepper. 
Generously pour some good olive oil. 
Place in the fridge and let the magic happen; ideally leave overnight. 
Exit the fridge half an hour before serving.
