SPICY MISO SEABREAM CEVICHE

This week, we present a recipe that smells like spring: Caroline's spicy miso sea bream ceviche.

Fresh products, a little exotic, to make your taste buds travel in a few bites. And to get everyone on board, we're accompanying it with delicious oven fries.

Get cooking! 

First of all, preheat your oven to 180° on grill.

Prepare the marinade: this is the marinade that will allow the fish to cook. You should prepare it about thirty minutes before eating to give the fish time to "cook". Pour a tablespoon of miso, the juice of a lemon and a lime, some olive oil and mix.

Tip for the lime: roll it on your work surface before cutting it. This allows the juice to escape. The lemon will be easier to squeeze.

Prepare the fish: cut the fish fillets into small cubes of less than a centimetre, taking care to remove all the bones. Add the fish to the bowl of marinade. Mix and place the bowl in the refrigerator.

The fries (this is the most perilous part of this recipe): place the frozen fries on a baking tray lined with baking paper and place it in your oven.

Yes, it was a joke. We have a great sense of humour at Three Seven Paris. Ha.

Cut up the vegetables: peel every other cucumber. Remove the seeds and cut into small cubes. Then cut the green chilli and the jalapenos into small cubes, taking care to remove the seeds. Peel the onion and cut it into small cubes.

Add the vegetables to the bowl containing the fish and the marinade. Keep a few diced jalapeno peppers for decoration. Put the bowl back in the fridge. Take a look at the fries in the oven. If they start to brown, turn them over so that they cook well on both sides. 

Start the presentation: cut the avocado in half and then cut each half into thin strips. Sprinkle it with lemon juice to prevent it from turning black.

Taste the ceviche and adjust the preparation. Here we have added a couple of tablespoons of soy sauce to add a savoury edge.

Then place the mixture on the Large Serving Dish. Place the avocados on top. Add the chopped coriander, a few pieces of finely chopped red onion, and the diced jalapeno peppers. Squeeze a quarter of a lime and add a little paprika for colour. Finish by adding a lime peel.

Take the fries out of the oven and place them in the Noodles. They will serve as little bowls for everyone to help themselves and keep the fries warm!
